Easy Vegan Pad-Thai

This delicious Vegan Pad-Thai was made with loads of vegetables which make this dish fiber rich! Feel free to mix and match vegetables as you prefer.

Vegan Pad Thai

Ingredients

For 5 servings

1 packet of Flat noodles (I bought Tagliatelle Nido from @pastagarofalode)

Sesame oil 2 tablespoons

Broccoli (cut into florets)

Beans, carrots, red, yellow and green bell pepper (cut into thin strips)

Peanuts 100 grams

1 Finely sliced onions, and 2-3 shallots

Garlic 3-4 finely sliced

1.5 table spoons Salt

chilly flakes as per spice preference

1 table spoon white sesame seeds

Pad-Thai Sauce

To make pad Thai sauce combine the below ingredients and mix well

2 table spoon of sweet chilly sauce

1 table spoon of teriyaki sauce

2 table spoon of Tamarind pulp

2 table spoon of dark soy sauce

1/2 spoon sugar

1 table spoon of plain flour

1 cup of water

Method

Par-boil the noodles, and drain the water ! Let it cool under running water and toss with 1 table spoon of oil.

Simultaneously toast the peanut in low heat for 5-7 minutes till it is crunchy and crush them! 😃

Take a wok, Sauté the veggies with onions, shallot, and garlic for 2-3 minutes.

Add the Pad Thai sauce into it !

Cook for another 1 minute in high heat.

Add the par-boiled noodles to the wok. Mix well. Season with salt.

Finally add chilly flakes, crushed peanuts, sesame seeds to garnish.

Tips

Pad-Thai is generally flat rice noodles, but you can replace it with any noodles! And it tastes great.

You can also make this with Egg, Chicken, Prawns and Tofu.

You can also top the Pad Thai with beans sprouts, coriander leaves and spring onions.

Can replace the tamarind with 1.5 tablespoons of lemon juice, sweet chilly sauce with ketchup, and sugar with brown sugar
